Much to my surprise, after plugging in our new HD television, I discovered that ESPN HD comes with our limited cable package. Therefore, Beth and I had Rusty over last night to watch the Vols take on Alabama and notch their first win in Coleman Coliseum since 1998.

This Mexican chicken casserole features a great “south of the border” taste. As listed, it serves 8, takes 20 minutes to prepare and 30 minutes to bake.

Ingredients

• 4 boned chicken breasts (whole breast), boiled
• 1 can mushroom soup
• 1 can chicken soup
• 1 can chicken broth (from boiled chicken)
• 1 can Rotel tomatoes
• 1 1/2 cups grated cheddar cheese
• 1 medium to large bag of Doritoes

Preparation

1. Layer Doritoes on bottom of casserole dish with cubed chicken on top.
2. Heat all liquid ingredients in a saucepan.
3. Sprinkle cheese over layed ingredients.
4. Pour liquid over all.
5. Bake for 30 minutes at 350 degrees.

On New Year’s Eve, Erika Gunderson got into a cab in New York City where she found a camera. What happened next was a high-tech detective story that resulted in finding the camera’s owner half-way around the world.

When we traveled to Leipzig, Germany last year, we toured the Stasi museum which chronicled the activities of one of the world’s greatest secret police forces. Read this Wired magazine article about efforts to piece together the Stasi’s files which were shredded after The Wall came down.

Back when I was a little kid, I remember my brother teaching me how to blow bubble rings in a pool. We would lie still on the bottom and use our tongues to blow rings of air out of our mouths. It’s a great trick for entertaining at your next pool party. Well, as it turns out, this video shows that dolphins can do this trick too. And, they’re much better at it than me or my brother.
